The kitchen at the M`AR De AR Hotels is run by Chef António Nobre, who has contributed a great deal with the quality of his art to the dissemination of Alentejo cuisine, masterfully exploring all the aromas of the region, as can be seen in his book "Entre Coentros e Poejos", published in 2010.
Among his many activities, Chef António Nobre is a member of the Alentejo Gastronomic Brotherhood; since 2002, he has attended the prestigious San Sebastian Congress, "Lo Mejor de la Gastronomia"; in 2002, he pioneered the initiative to draw up a menu of the country's various olive oils; in 2004, he received the "Panela ao Lume" award; in 2006, he published the book "Chefes Portugueses, as melhores receitas" and received two gold diplomas in the "Gastronomia com Vinho do Porto" competition. He also contributes to many newspapers and specialist websites, and in September 2006 he was chosen as the chef for the "Apetites" page of the Expresso newspaper.
In collaboration with the Norwegian Fisheries Council (NORGE), he created "Simple recipes with dried and fresh cod, and with salmon"; he was invited by Chef Henrique Sá Pessoa to take part in the RTP 2 television program "Entre Pratos" and is planning to publish another cookbook entitled "70 practical recipes for the whole family".
